In this talk, I will, from the point of view of a theoretical physicist, shed light on hydrodynamics as the effective dynamical theory of all things hot. I will describe how universal behaviour stems from the symmetries of the full microscopic theory and discuss several examples. I will comment on 21st century developments such as hydrodynamics as an EFT and the emergence of fluid dynamics from pure gravity, and explain why those things are relevant to a high-energy physicist.
